Gonzo Chicken

INGREDIENTS

2 c bagged mixed salad greensGonzo_Chicken
1 c baby spinach
1/3 c rinsed chickpeas
1/2 c diced, precooked chicken
1 tsp chopped pecans
1 scallion, sliced
3 slices avocado
2 tsp olive oil
1 1/2 tsp balsamic or red wine vinegar
salt and pepper to taste

PREPARATION

Mix the greens and spinach, chickpeas, chicken, nuts, and scallion together in a bowl. Top with the avocado, oil, vinegar, and salt and pepper.

Grapefruit and Mint Marinated Chicken

INGREDIENTS

2 lbs chicken breastsMint_Marinated_Chicken
2 large stalk of fresh mint
2 Tbsp Olive oil
Juice of 1 large grapefruit
Zest of one grapefruit
2 Tbsp fresh ground pepper
Kosher Salt (optional)

PREPARATION

1. Put all ingredients together mix well. Let sit for about 1-2 hours.
2. Put grill on high
3. Salt both sides of chicken
4. Place on hot grill, put on the lid and turn it down to low/med.
5. Leave for 6 minutes.
6. Flip once. Close lid for another 4-7 minutes depending on thickness of the breasts.
7. Remove them to a rack and let them rest for approximately 7 minutes.
**You can also roast them on 400 for about 15-20 minutes instead of grilling.
